Guji has proven itself over the last few years to rival Yirgacheffe for brightness of cup. You can find highland areas of forest coffees in remote places as well as dense production in well-known areas like Aleto, Wondo, Darra, and Dale. Soil plays a huge part in determining the taste of coffee. The soil in Sidamo contains volcanic deposits, rich in minerals and nitrogen. Coffee can be grown on a plethora of different soils but the ideal types are fertile volcanic red earth or deep sandy loam. For coffee trees to grow it is important that the soil is well draining which makes heavy clay or heavy sandy soils inadequate.This is our third coffee from Guji this season (prior to Mathahara and Homacho Waeno) and our first Natural coffee to finish off 2017. Guji is a privately owned communal wet mill in Sidamo, collecting cherries from various smallholders in surrounding areas. 

Sidamo is famous for its high quality Natural or sundried coffees that produce coffee with genuine and unique red berry flavors. This grade 1 Natural coffee has had a three-stage drying process protecting its clarity. This attention to detail during the process has given us a beautiful example of the celebrated Natural flavors while also having a vibrant mouth feel and a clean finish. 

A natural processed coffee is very different than a washed processed, like a lot of the ones on our shelves. The difference is that after the bean is picked, the fruit of the cherry is left on the bean. Freshly-picked cherries are spread out on tarps, patios, and even sometimes along the road—wherever the fruit can best dry in the sun. Reaching optimal moisture content can take weeks. This imparts unique sugary flavors into the coffee before processing.
